While the "Standard" search_api_solr connector allows to override the connection details (and thus select the core you want to connect to - screenshot attached), that functionality is not available when using "Acquia".

Effectively this means that whoever uses acquia_search and has multiple search_api servers, the only option is for all of them to use the same Solr core, which can be limiting.

On the other hand, if you *do* want to override that, that can't be done via the UI, but rather via code. For that, see https://docs.acquia.com/acquia-search/multiple-cores/override
However, it is true that, at this point, the overriding is done for any and all Search API "servers" that use the "Acquia" Solr connector (meaning, you can't override Search API Server #1 differently than Search API Server #2 on the same site).
With this clarification, can you explain what this issue is actually about?
