I have no idea how this works but it would be cool to have a text to vote option.

Fivestar is only a front-end widget for displaying votes and entering them. It doesn't actually provide any of the underlying voting mechanisms or database storage (that's handled by VotingAPI). Since text voting wouldn't use the widget display of Fivestar, this request doesn't really apply to the Fivestar project, it'd probably be integrated by a module that already handles SMS, or in a dedicated module.
