Inside the index_entity.inc in the getFields function a cache is used to store the fields. But this cache is language independent. So if you build the cache in Dutch and then view the fields index page in English then you'll get dutch field titles.

This is easily fixed by either giving the getFields function a reset flag or by adding the language to the cid. Attached patch does the latter because this doesn't break any other modules.
