This is already implemented for Commerce Backoffice: Orders View.
It should be done also for the others Views : "Commerce Backoffice: Products", "Commerce Backoffice: All Product variations", "Commerce Backoffice: Content".
this issue was reported also on other issue : #1935048: Table sorting doesn't work for the product variations view which asks for other things to be solved.
