How to exclude fields

Okay - figured it out:

For D7, go to the Manage Display screen for the content type (admin/structure/types/manage/(insert content type)/display). You should be seeing the Default settings. If not click on Default on the upper left.

Near the bottom, click on Custom display settings. Check off the displays you wish to customize (in this case Print). Save.

You should now see links next to "Default" near the top for Print or whatever display you want to customize. Click on the Print link and proceed to make changes for that display. Save. That should do it!
