The list of bundles in the Views UI doesn't make sense. This is because the same variable $bundles is used for two different things.

Great find. This copy / paste error was duplicated for both the product reference field and line item reference field relationship definitions. Even better, the line item reference field relationship didn't use the $bundles variable at all in its help text. : P
