The connect module seems very powerful and we'll be using it in various ways - one is to send targeted emails from our website. As it is now, we can only specify one target email address. How can we modify this module so that we can specify multiple target email addresses?

The latest version allows one to set both a lookup target and a specified target. We can certainly play with the prospect of allowing for a more flexible system of specifying multiple targets.
