In addition to a custom theme file it seems like a node display specifically for node_embed would be handy.

In my use case I have a video node that has title and description fields but when I embed the node I only want the video field.

Is this something other's would find useful or on the roadmap for this module already?

+1 for this. Anything that increases the flexibility of this module (the purpose of which is to provide flexibility in displaying content) would be a big win IMHO.
