It would be great, similar to how the field overrides works, to allow the exposed sorts to be available on the panel pane configuration.

First of all, does Views expose such functionality?

If not, that's where the feature request belongs. If it does, I guess we'll move it to ctools as that's where the Views content panes come from.

Only exposed filters are currently "configurable" for "Views Content Pane" displays when used in Panels. Sorting is not.
