How do I need to configure Varnish to connect to the 'Varnish control terminal' if Drupal is running from another (web)server?

For example:

web server IP : 10.20.30.40
varnish server IP: 10.20.30.50

Do I have to configure Varnish with

-T localhost:6082 \

and connect from the Varnish module to: 10.20.30.50:6082 ?

yes, that should work if that port is open in the firewall on your Varnish server. You can try it manually on your web server by typing:

telnet 10.20.30.50 6082

If you bind the administration interface to localhost:6082 it would in most casen be only available to localhost. In your case you would probably want to bind to 10.20.30.50:6082

this was correct. the varnish host was needed to be the address, not localhost. thank you for your comment
