Problem/Motivation

In D7 Owner wasn't a group and had its own table and realm and the profile form only offered role base groups. In the D8 port due to some code reuse, Owner started surfacing in Profile forms.

If a Profile grants owner it matches and logged-in user.

Grant Owner to a Profile
Grant a Node a Profile.

Hide Owner from Profles
