Overriding core's list builder for entity type fields is not the best way display Twig helper expression.
Proposed resolution
I think it make sense to move this from backend due to lack of technically "good" solution to alter table row for list of entity fields. So make sense achieve same thing with JS.
User interface changes
In case this will be done with JS we can add copy to clipboard feature and basic syntax highlighting with pure CSS to look way better.
