It'd be nice if it recorded a user's membership history so an admin could see when a user's membership was activated and expired in the past.

Is logging all changes to watchdog enough for you, or you would need some more sophisticated stuff?

It'd be nice if it was maybe in the user profile...so you can look up their membership periods in the past.

I was going to suggest to put it on the /admin/user/membership page but if a user isn't a current member, then there wouldn't be a way to get to their membership history.

No, it wasn't - and most likely it will not be implemented in this module, have a look at the Role Expire module instead.
