Can I set a min/max number of nodes to create per cron run? I have a few hundred feeds and is set to go through all of them per cron run. Each time it only creates around 200+ nodes. Or it really depends on your hardware? Thanks

Depends on hardware and your feeds. There is no option to set the number of feed items to be created.
