If we decide go ahead with this module and its really useful and flexible per-node-type settings, can we start off by doing an en-masse deletion of all existing revisions except for the latest published one. Something like a VBO feature?

If you configure you settings and then create and process the queues via Drush this will achieve the effect you want.
