Problem/Motivation

4.1 will be deprecated from ChatGPT, meaning that 5.2 is the way to go. Its cheaper and better, so we should set that as the default provider.

Steps to reproduce

Install the AI and the OpenAI provider on a new site
Setup the OpenAI provider
Check the default models - it will set 4.1.

Proposed resolution

Change to 5.2.

Added a comment to remove the update hook - it makes stuff better, but we shouldn't push that change to working systems.
