Allow using Simple Oauth ~5 or ~6 for a smoother update process

Problem/Motivation

Some Drupal ~10 projects with extra modules will face several issues.
and blockers to update to Simple Oauth ~6.0

Proposed resolution

• Change drupal/simple_oauth to ~5 || ~6 in the composer.json file, to manage a smoother update process.

Having that in 9.1.x and 10.0.x branches, but not the 10.1.x branch.
Only to support old Drupal ~9/~10 projects, but not with Drupal ~10 projects.
