Ensure Migrate path for a v1 and v2 estores

Problem/Motivation

eStore is a theme with a lot of steps to install (that need composer [commerce, address vendor additions, etc]. Our theme overextends its purpose. themes can ONLY declare dependency -- they do not support HOOK_UPDATE/HOOK_INSTALL!!! this is a blocker in added features..
