Is there a particular reason why the field_prefix in field_ui.settings is empty.(https://git.drupalcode.org/project/commerce_kickstart/-/blob/3.x/config/...)
After I've installed the kickstarter, created fields on entities will no longer have the default 'field_' prefix. I was wondering if this is expected behavior?

It's personal preference, really. There's no functional difference between a base field and a UI added field any more ... the property vs. field distinction was erased in D8. As such, for simplicity's sake in planning and JSON:API utilization, we prefer no prefixes in our projects.
