I created a view that has an exposed filter (drop-down box) containing the terms of a taxonomy vocabulary. By default it shows all (<any>) records. If I select any sequence of taxonomy terms it updates correctly, but as soon as I select all (<any>) again the entire view disappears.
I don't recall if it exhibited this behaviour prior to Views 2.1, but I have already cleared the views cache and the problem remains.

<All>working correctly.Are there particular settings you're using that make this happen?

harrisben commentedI just tried testing again after I changed a few things and couldn't duplicate it myself so I returned the settings to what I could remember of them. It wasn't until I turned off the pager and set the items to display to unlimited that I could duplicate it (this is in table view btw).
