This module could really use better documentation. I was able to find some information in #2971221: How to Use but since I don't want to use paragraphs, I wasn't able to follow those steps. If I'm just using native Bricks, how do I add a modifier field?

This page should be added soon into project guide:
https://www.drupal.org/docs/8/modules/modifiers

Bricks are based on paragraphs, so it's possible to process the same steps (you can create field_modifiers on your bricks).
