Problem/Motivation
Media lets you map metadata to fields on the media type, which is pretty cool.
These mappings are presented when you add a media type, which is less helpful, because there aren't fields to map to:

There's a lot of help text about mapping things to entity fields, without actually telling you how you can get some entity fields in the first place. Furthermore, the text says this:
Media can automatically save this metadata information to entity fields, which can be configured below.
That makes it sound like you can configure the entity fields below the text, which is not true. You can't configure entity fields until after you submit the form it's on.

marcoscano#2836153: Improve metadata mapping UI on Media type form is probably related. I believe the idea there is to solve more problems than those identified on this issue, but there may be some overlap.

Doesn't seem to have much movement, but maybe quick fix would be for help text?
