In #2666792: Provide a route provider for add-page of entities, a new function was added to core, template_preprocess_entity_add_list. There is function with the same name in 8.x-1.x in entity.module: http://cgit.drupalcode.org/entity/tree/entity.module?h=8.x-1.x#n35

That's what is causing the fatal. The upstream issue was committed a week or so ago.

It sounds to be a simple task, however the delay in it implementation make impossible to to use the Drupal Commerce and other modules.
Is there any chance to get the updated module sooner?

Entity API and Commerce can't be used on Drupal 8.1. This is documented in both issue queues.

The Entity API PR working to fix this is https://github.com/fago/entity/pull/38
Basically, we created 8.x-0.x as the branch for Drupal 8.0.x and 8.x-1.x will be Drupal 8.1.x only.
Commerce itself will move to only supporting Entity API 8x-1.x and Drupal 8.1.x

And no, there's nothing simple about fixing this, we committed half of the Entity API module to core, which means
rebasing all remaining functionality.
