Current the Expeditor Inet export is a big blackbox. If one wants to modify the output (change a field, e.g. gender field), the best way is to use an alter hook to replace the commerce_socolissimo_export_expeditor_inet plugin with a subclass, extend the generate_rows() method to modify the result (which fortunately a 2D array!). However it is not as elegant as a yet-another-alter-hook in the Drupal way.

#1 is not tested and does not work. This one is ;) It also simplifies so that alter hook implementations don't have to take care of the length.
