Hi,
I've tried a new installation of MERCI module (6.x-2.0-beta7), and it seems hook_schema() is not updated to the latest version. I had to apply update.php to create columns daypart1_price and so on.
I think hook_schema() should always contain the last version of the schema, so a first installation is directly fonctionnal.
That said, your module is really great, I'm really looking forward to the future of it !
