When you create a "Key / Value (plain)" field and set the Value label via the Manage form display UI, it is not set when viewing the field on the entity form.

Steps to recreate:

  1. Create a Key / Value (plain) field on a content entity
  2. Go to the "Manage form display" section for that entity
  3. Set the "Value label" to something other than "Value" for the new field
  4. Create/edit a new content entity with the field on - you will see "Value" as the label regardless.
