Reordering columns works, but if you continue to sort columns, the table it will eventually revert back to the way it was. Sometimes it happens very quickly, and sometimes it takes a minute.

I'm beginning to think that you have some sort of auto-refresh on your site, perhaps?
That would reload the page and reset the reordering (plus just about every other DataTables JS feature).
Also: any suspicious messages in your browser console?
