I'm getting this error message after creating a header and attempting to send out a test newsletter:

Fatal error: Call to undefined function simplenews_mail_tokens() in /homepages/36/d105421224/htdocs/cms/modules/simplenews_template/simplenews_template.module on line 117

Why?

The entire HTML source for the Header of the test newsletter is this:

Same issue here, I need a way to solve this ASAP...
Anyways, I'll try to check the code and see if I can solve it by myself.

Is it possible that using the Foliage theme caused the problem? Unlikely, but that's the only thing I can think of.

If you are still having issues with this, download the dev version of the module... this appears to be fixed there.
