How do I user this module and triggers to create an action to unpublish a users content when his role change?

Unfortunately, I think you would have to write an action that would do the work. There doesn't seem to be an advanced action that allows php, although that would be a simple (and dangerous) module to create.

Role Change Notify provides the trigger... but you're missing the action.
