The email address on install is "this.email@is.invalid". I have tried an install on a fresh system and with preseed (as I did with aegir2). It seems like the old default (aegir@) isn't used anymore either. On a fresh install, when I check debconf-get-selections, it shows the email address should be that, but it isn't used.

ouch ... way too long ago.

This seems to be working as expected though. In the CI tests I see:

Error validating client email ` aegir@example.com`. Please check your  [warning]
user account email.

Which means aegir@example.com gets in from the pre-seed, but is rejected.
