Please provide us some screenshots. Sorry i didn't yet find time to test it, so a screenshot of what you describe in words would help us/me a lot to understand the use case.
With our vision to build a collection of paragraph types and introduce layout aware paragraph types or some with style information, for sure we will need to group these types of Paragraphs into at least the fundamental types. This will allow us to remove complexity from the UI in content creation (such as hide certain controls for specific users.)
Most importantly, we need valid real world use cases that describe the needs and we want to collect them in Paragraphs itself to do better QA.
We are happy to hear from you about the ideas in the Paragraphs issue queue.

@miro_dietiker I certainly can create an issue and I appreciate you reaching out. I felt the grouping aspect was maybe outside of the reach of the core paragraphs module but I'm open to having a discussion about it. One thing I was thinking is that maybe we can make the 'add' widgets in paragraphs pluggable so that modules could easily extend them(i'll create an issue for this too). That said, I'm open to ideas. Screenshots are high on my list, still heavily in development.

They honestly look really cool and I'd love to be involved as I can. Do you have any sort of timeline and is it known whether these UI changes will be part of the existing 8.1.x branch?

miro_dietikerWe spend a long focus phase to get Paragraphs out recently. Our resources dedicated to a Content Creation Experience Initiative recently found a bit of focus to get Diff module ready. But we are short before closing that chapter and will then jump into an active Paragraphs phase.
And yeah, we don't want to fork to 8.x-2.x, instead want to find valid defaults for standard behavior and see what we split into optional modules inside paragraphs project. Some pieces might be incubated in separate repos before we merge it into Paragraphs itself.
We spent a long time discussing, now it's time to do it. We also plan to do some focus sprints soon.
