Create example for overriding field types for modules adopting Project Open Data Content

This module aims to create a content type that will match up with fields from Project Open Data: http://drupalcode.org/sandbox/madmatter23/2063583.git/blob/refs/heads/7....

It would be great if other modules like dkan_dataset could use those as a base and override the field type and formatter. The maintainers have suggested that that is possible and would be a desired outcome of this project. It would be great to start out with some code examples or thoughts on strategies to implement that from the perspective of adopting modules or site builders.
