Hi,

Is there any way to have shared galleries so registered users can upload images, but without being able to delete others' files and galleries?

I've been playing with the permissions but haven't had much success.

Not yet. This is a file access issue, which is not part of media_gallery.
See #1227706: Add a file entity access API.
(Maybe this is only available in media 7.x-2.x? I am not sure.)

Check your Node permissions:
- Gallery: Edit any content
- Gallery: Delete own content
- Gallery: Delete any content
