Hi when enabling a name with for instance a ' in it, the output in html is displayed wrong.

What do you mean with 'enabling a name' ?
I've did some tests with creating users, blocks, content, menu items all are working fine

I added a menu item called foto's and that's also the name of the page.
It outputs the same as what I mentioned in the screenshot.

Are you using the latest official release of Drupal 7 and Kanji?
I've tested all special characters and all are displayed correctly

I also installed the media gallery module to test, but still everything keeps fine with me.
Do you have that issue also when you enable other themes like Garland?

I'm pretty sure the issue is not from the Kanji theme but from one of the modules you are using.
