I am trying to get the "Main Menu" to format like the thumbnail across the screen but regardless of which region I place it shows up like a standard vertical navigation and there is no "primary menu" option in 7. Any thoughts on how I can fix?

Primary menu in Drupal 7 is now Main menu
You don't have to place this inside a region. When you fill the Main menu with links this will appear as the horizontal styled menu with dropdown.
Make sure you have Main menu enabled at: admin/appearance/settings/kanji

For the submenu's to be dropdown the menu links need to have the option "expanded"
