The plugin page says you can choose between 3 versions of jQuery to update to. But from what I can tell, it just upgrades to the lowest of those 3 and that's all it does. If there's some super-secret configuration page somewhere, you should probably talk about it in the documentation.
Thanks very much for your work on the module, Drupal without at least a semi-recent jQuery is pretty much worthless so I am very glad you maintain this.

this is only available in the dev version, not the "stable release".
Download 7.x-2.x-dev and this will be there in the default configuration of a module.
Time for an upgrade of the stable version if you say 1.8 is available in the documentation.

I have jQuery Update 7.x-2.3 (Stable) module.
I cannot open the configuration page with the path "admin/config/development/jquery_update". (It jumps to "admin/config/development" instead.)
It supposes that I can access the page of changing jQuery version into 1.7 (and above).
Does anyone have any idea?
The status report shows "jQuery 1.5.2 and jQuery UI 1.8.11".
