The example path in step 3 of the installation instructions - http://YOUR_SITE.dev/admin/config/services/social_feed/settings - doesn't work if used on installation. Specifically, social_feed should be instagram_social_feed . (Maybe the module was originally named social_feed?)
Just a small wrinkle I encountered while trying this module out :-)

I had to install my site in a subfolder (http://YOUR_SITE.dev/mydrupalhere). At this point your link "Click here to authenticate via Instagram and create an access token" is returning "http://YOUR_SITE.dev/admin/config/services/social_feed/settings" instead of "http://YOUR_SITE.dev/mydrupalhere/admin/config/services/social_feed/sett..." and if we copy pasted that info into instagram client, we will fail to authenticate.
