If you have 2 content types ContentA and ContentB and both have the field myfield if you change the filed level permissions on 1 field it changes the permissions on the second field.

I was just about to open an issue for this. Indeed, the permissions are only accurate to the field level, but re-using fields amongst different entity bundles is very common so it'd be nice to have field permissions operate on the instance level.
