If field value is empty read-only widget not only prints empty value, but also hides label, so user is confused like "where is this field" and usually calls it bug (so it is UX bug).

Good behavior should be to render label and provide "empty value" (will be printed in place of widget value, not on entity view).

There is a checkbox in the field settings 'Display Not defined if empty'.
Do you mean that it's not showing even when this is checked, or did you just not see this setting?
