Missing LiteLLM AI providers and models

Problem/Motivation

We are trying to set up a demo of all AI features in Drupal CMS. We cannot find LiteLLM models for some operations. We can find OpenAI models for some operations that do not have LiteLLM models. It is especially concerning that we cannot find a moderation model because that could get our entire LiteLLM proxy banned if a user abuses our AI service.

Steps to reproduce

1. Launch the Drupal CMS AI demo.
2. Visit /admin/config/ai/settings.
3. Try to set LiteLLM Proxy as provider and default model for every AI operation.
