core/config/schema/core.data_types.schema.yml has wildcard schema entries for fields:

# Generic field settings schemas.

field.storage_settings.*:
  type: mapping
  label: 'Settings'

field.field_settings.*:
  type: mapping
  label: 'Settings'

field.value.*:
  type: mapping
  label: 'Default value'

The wildcard for `field.value.*` is slightly problematic since it will assign the generic schema, but potentially with the wrong datatype.
