Follow-up to #2332739: Remove SortArray::sortByWeightAndTitle

that got tricky trying to expand the coverage to ConfigurableLanguages (which implement the LanguageInterface)

might be worth mocking a language and show that anything that implements the LanguageInterface will work.

Proposed resolution

Mock a language and use that in the data provider also.
