In Real time SEO configuration of the form display, we can pick which theme is used when preview will be rendered.
The recipe doesn't configure it so it looks like it takes the front end theme.
Not sure why, but the preview is not working with my front end theme, switching to Gin(my backend theme) it resolves the preview.
I think it's possible to detect the admin theme in the recipe.

Using the administration theme does not give an accurate representation of what your site looks like to search engines.

You should verify that the tool works on a front end theme like Olivero, then figure out what in your front end theme is coausing this not to work.
