In the date form I would like to change the word month into mánuður, the word day into dagur and the word year into ár. Can I change it somehow?

You can translate these words just like every other word in Drupal afaik. Just use the Locale module. The words "Month", "Day", and "Year" are all wrapped in t() as far as I know.
