I've been using google's adsense on my site by simply adding the adsense code into a block. But I see there is an adsense module. Why would I do that if the code works in a standard block?

Depends on your needs
The Adsense module has a number of features you may or may not want to use. First of all it hides adsense from the site admin, and also allows for access permissions to hide adsense from certain roles. Disabling ads entirely while giving you a placeholder is ideal for development. Adsense.module also sets a maximum to the amount of ads on a certain page. The module implements section targeting and enables revenue sharing.
Last but not least; the adsense tag, allows you to easily insert adsense ads into your content.
