No matter how many shipping methods I activate or which options I select in the backend, ubercart always automatically selects the shipping option in the checkout section.

I want the client to be able to select among several options (store pickup and global quote, for instance).

Is there something I'm missing?

It's not enough to just enable the shipping module, you have to configure the module and tell Ubercart which of the enabled modules it should use. You haven't mentioned or shown any of that configuration.
