I am wondering if there is a nice library for accounting in existence which would be good for this ... or even if one of you knows a Drupal module out there that I can make easy calls to, to save dev time.

I am using D7 for a kind of service work queue for proofreading student papers. We are anticipating working with schools who might contribute a wee bit to make their students' papers cheaper, and thus it would be good to have accounts set up for schools, from which - each time a paper from one of their students gets reviewed - a wee bit is drawn off to defray the cost. Are there modules out there that would be good to use, or would it just make more sense to create account entities with classic three ledger accounting database schema, and then some sort of class by which funds can be transferred? Or are ubercart or DrupalCommerce adviseable for this? There are no physical products to buy from a shop - it's all calculations I'll be making with custom modules.I see modules like CommunityAccounting and DoubleLedgerBookkeeping - but each with less than 100 sites using.

I'd test the modules you've already found.

note: 100 installs is simply the amount of sites that are pinging back to drupal.org. (this can be disabled). It also doesn't take into a account any sites that aren't public (ie on a local intranet). I's also keep in mind that only a small fraction of users would be doing anything accounting related.
