I was reviewing the Files Overview view in D8, and saw that it gave me all of the image files on the site. Is there a way to view just the images in the view ? The title field provides a link to display the image, but I would like the view to return the images.

yes. Create a new view and configure it to display images add and remove whatever fields you want to display.

I don't see an option to "show" images, only content, files, comments, log entries, taxonomy terms, users, custom blocks...

Am I missing a module for this in Drupal 8?

how are the images added to your content? Assuming they are in a file field (and not embedded in text area), you would create a content view and add the image field to the fields sections of the view. If they are embedded in a text area, you'll have to dig a bit more. I can't directly help there as I avoid embedding images.
