Can't seem to change the focal point on a default image, I understand that I can't set that on the field level but should I not be able to change that when I go to create the node with Focal point on the image field? It shows the crosshair on the default image but moving the crosshair seems to do nothing.

drupalize.mesimplytest.me? There has to be something unique to your setup because it this was a general problem then everyone would see it.Not being able to move the crosshair really sounds like a js issue. Are you swapping out the version of jquey you're using?
Another thought... If you double click on the crosshair you should see a hidden field appear... Does it? If so, does changing that field move the crosshair?
