I am trying to use Color CSS Declaration formater to colorize text and background in a view, I tried many ways and didn't find any documentation, so does anybody knows how this is working in Drupal 8 ?

Tokens weren't useable at time of posting within the CSS color formatter. They are now.
To use:
navigate to entity view display appropriate for your entity (ie for default display on an article node that would be /admin/structure/types/manage/article/display
Add tokens as required to the color field's selector text box.
